Nose
Complex and elegant on the nose, with presence characteristic of ripe fruits and spices. Tannic, complex, concentrated. Very ripe plum and very present red fruits. Evokes spices of wood and wild mushrooms.
Palate
Balanced tannins although very present in the mouth, making it ideal for long-term conservation. Simply extraordinary. Enormously deep and complex. Aristocratic and firmly breed tannic. It has the exuberant oak and polished texture of the best red wines in the world, combined with the flavors of dried, fleshy and smoky fruits, typical of the Tannat variety.
Appearance
The celebrated Tannat produces powerful wines of intense color. Seductive, Intense, surprisingly dark purple.
Food Pairing
Wine for haute cuisine occasions and special dishes.
Roasted red meat: leg lamb, roast beef and pork. Grilled red meats: entrecôte, rump steak and rack of lamb to the embers. Faithful ally of Creole barbecue and Uruguayan barbecue.
Game: wild boar, deer, venison. A great companion to the hare, partridge and wild duck. Roasted wild mushrooms and mushrooms. Tenderloin to black pepper. Baked stuffed pasta with important sauces. Raw hams and sausages.
Cheeses: fatty and spicy hard pasta type Parmigiano-Reggiano. Seasoned sheep and goat cheeses.
Aging
30 months in French oak barrels.
These wines remain for at least 18 months in new barrels and a minimum of 12 months in bottle.
