Nose
Complex and elegant on the nose, with presence characteristic of ripe fruits and spices. Nose full of elegant power. Intensely fruity aromas that continually emerge, They evoke ripe red fruits such as cherries, blackberries and pomegranates, as well as mint and black pepper.
Palate
Complex, intense, very refreshing and easy to drink. Blackberries, raspberries and sour cherries. Notes of cinnamon, with a rich texture and balanced acidity. Fine, well integrated and persistent bubble. Friendly in mouth, with marked but sweet tannins. A fruity touch gives it depth and elegance. Long finish and velvety with exuberant and dense effervescence.
Balanced tannins although very present in the mouth, making it ideal for long-term conservation.
Appearance
The celebrated Tannat produces powerful wines of intense color. Very intense, deeply violet and dark purple.
Food Pairing
This is a unique case in the world since there is no known other natural sparkling wine made with Tannat. Original and delicious, it is ideal as an aperitif or accompanying an entire meal from start to finish.
Great sparkling aperitif wine and high-class table wine. Ideal to accompany Sweetbreads
grilled Uruguayans, fatty and spicy hard cheeses such as Parmigiano and mature sheep or goat cheeses. Red and black caviar. Seafood in strong sauces. Gratin oysters. Grilled prawns and shrimp. Grilled salmon and sole. Fresh roasted mushrooms. Pickled forest mushrooms. Roasted lamb. Poultry baked with rosemary. Pastas and seasoned dishes. Serve it very cold between 4º and 6ºC.
Aging
6 to 24 months in bottle on yeast before disgorging. (sans dosage)
